Vegetable Patties in Green Sauce

1. Beat egg until a uniform color is achieved. Add spinach, rice and Ensalada de Verduras vegetables. Season with salt and pepper.
2. Heat oil. Fry patties by pouring tablespoons mixture, all of same size. Turn edges when beginning to gold. Drain excess oil.
3. Heat Salsa verde sauce; serve over hot patties. Suggestion: Serve with Frijoles Refritos beans and cheese.
