Preparation time

1. Remove veins and seeds from jalapeño slices.

2. Mix the potatoes, chopped onion, grated cheese, season with salt and pepper to taste and mash.

3. Heat the tortillas to soften, place on a flat surface and fill with the potato and cheese mixture, place 2 slices of jalapeños on top of the potatoes and roll.

4. Heat oil and fry until golden brown and crunchy. Drain on paper towels.

5. Serve and top with shredded lettuce, sour cream, and Mexican salsa.
