Potato and shrimp croquettes with pickled sauce carrots

Preparation time
1. Chop Zanahorias en Escabeche carrots. Set aside.
2. Mix mashed potatoes with Salsa Mexicana sauce, carrots and shrimp.
3. Make small balls with above mixture.
4. Dip small balls in egg and coat with bread crumbs.
5. Fry in hot oil. Serve with extra Salsa Mexicana sauce and cilantro.
