Mole enchiladas filled with añejo cheese

Preparation time
1. Lightly dip tortillas in hot oil. Set aside.
2. Heat chicken broth. Add Mole sauce; dilute and boil until thickened.
3. Mix anejo cheese with Ensalada de Verduras. Fill tortillas with this mixture and roll. Pour hot mole sauce. Top with sour cream, onion rings and epazote herb.
