Ceviche Botanero (fresh vegetables marinated as appetizer)

Prepare this delicious and healthy vegetarian ceviche that your whole family will love.
Ingredients
Preparation time
1. Peel strips lengthwise from cucumber, making alternating patterns of green and white. Cut in 3-centimeter thick slices.
2. Scoop out seeds, being careful not to pierce cucumber cups.
3. Mix: cucumber cubes, jicama, onion, cilantro, lime juice, Salsa Negra sauce and Salsa de Chipotle sauce.
4. Fill cucumbers with above mixture. Serve.
